Moroccan Chickpea Stew 2.0

1 tbsp olive oil
1 whole onion
diced
3 cloves garlic
2 tsp ground cumin
2 tsp ground coriander
1/2 tsp cayenne
2 tsp garam masala
1/2 tsp curry powder
1/8 tsp salt
3 whole sweet potatoes
cubed 1/2-inch
2 tbsp honey
14 1/2 oz diced tomatoes
can
1 cup tomato sauce
14 1/2 oz chickpeas
canned, drained, and rinsed

Heat up the oil in a large saucepan. Add the onion and garlic and cook until the onions are clear.

Add in the cumin, coriander, cayenne, garam masala, curry, and salt. Stirring often, cook for 1 minute until you can smell the spices.

Add in the diced sweet potatoes, honey, diced tomatoes and tomato sauce. Using the can of diced tomatoes, add enough water to completely cover the ingredients. Simmer on medium heat until the potatoes are softened, stirring often.

Add the drained chickpeas and cook for another 5 minutes.

Taste the stew and adjust seasoning as needed using any of the spices, salt or pepper.

Serve hot.
