Sun-Dried Tomato Orzo Salad
ingredients
all
1/4 cup sun-dried tomatoes
1/4 cup red wine vinegar
3 cloves garlic
1 1/2 tsp dried basil
1/2 cup olive oil
salt
to taste
pepper
to taste
12 oz cooked orzo
3 oz red onions
diced
4 oz tomatoes
chopped
4 oz cucumber
chopped
6 oz sun-dried tomato vinaigrette

For the Vinaigrette

Add the sun-dried tomatoes, vinegar, garlic cloves and basil to a blender. Pulse a few times.

Slowly drizzle in the olive oil while on medium low speed.

Taste and adjust with salt and pepper if needed.

Refrigerate if not using right away.
For the Salad

Mix the remaining ingredients together.

Chill for a minimum of two hours. Serve cold and dress before serving.
