Mediterranean Chickpea Quinoa Salad
ingredients
all
3 tbsp olive oil
2 tbsp balsamic vinegar
sea salt
to taste
ground pepper
to taste
1 clove garlic
large, finely chopped or crushed
2 tsp lemon juice
freshly squeezed
1 cup garbanzo beans
cooked and drained
1 cup quinoa
cooked
1/2 cup red onion
chopped
1/2 cup sun-dried tomatoes
rehydrated and chopped
1/2 cup fresh basil
or parsley, chopped

For the Dressing

Mix together the olive oil, vinegar, salt, pepper, garlic, and lemon juice in a bowl.
For the Salad

Combine the beans, quinoa, onion, tomatoes, and basil in a bowl and toss until well combined. Serve cold or at room temperature. If desired, drizzle with additional dressing to serve.
