Raw Key Lime Pie

Raw Key Lime Pie
ingredients
all
1 1/3 cup granola
low sugar/gluten-free
1 cup raw nuts
mac, walnuts, pecans, etc
5 whole dates
soft and pitted
3/4 cup lime juice
7 1/2 oz avocado
approximately 1 whole avocado depending on kind and size, weigh to be sure
1/2 cup agave nectar
6 tbsp coconut milk
1/2 tsp vanilla
1/8 tsp salt
2 tbsp lecithin
1/2 cup coconut oil

For the Pie Crust

Blend granola and nuts in food processor or blender until crumbly, then add dates.

Blend until mixture sticks together.

Pat into pie dish.
For the Pie

Blend the lime juice, avocado, agave nectar, coconut milk, vanilla, and salt in a blender until smooth.

Add lecithin and coconut oil, blending until well incorporated.

Pour into prepared crust, then refrigerate for 1 hour or more until set.
