2 tsp oil
1 whole onion
chopped
3 cloves garlic
smashed
1/2 tsp turmeric
1/2 tsp chili pepper flakes
15 oz organic pumpkin
1 can
1 1/2 cups chicken broth
or vegetable broth
7 oz red peppers
jarred
1/3 cup peanut butter
smooth and natural
1 tsp agave
5 tsp sea salt
1/4 tsp ground pepper
1 tbsp lemon juice
fresh
2 tbsp scallions
chopped, or chives for garnish

Heat oil, then add onion and garlic. Cook while stirring for about 10 minutes.

Add turmeric and chili pepper.

Add pumpkin, broth, peppers and peanut butter. Whisk to mix and bring to boil.

Reduce heat, simmer for 5 minutes, then stir in agave, salt, pepper, and lemon.

Transfer to blender or food processor and purée until smooth.

Pour into 4 bowls and garnish with scallions.
