Raw Carob Brownies with Avocado Icing

2/3 cup walnuts
1/3 cup pecans
1 cup Medjool dates
pitted
1/3 cup carob powder
can also use raw cocoa powder
1/3 cup shredded coconut
2 tbsp coconut oil
1 whole avocado
2 tbsp maple syrup
1/4 cup carob powder
raw
2 tsp vanilla extract
1/2 tsp cinnamon
1/4 tsp orange peel
dried and grated
salt
a pinch

For the Brownies

Combine the walnuts, pecans, dates, carob powder, coconut, and oil in a food processor until well blended and mix starts to hold together when pressed. Pat into 8” square pan.
For the Icing

In a clean bowl, combine the avocado, syrup, carob powder, vanilla, cinnamon, peel, and salt. Stir until creamy and avocado is well mixed. Spread on top of brownie mixture and set in freezer to set for about 45 minutes. Thaw for 5-10 minutes before cutting.
