Vegetarian Wontons

Vegetarian Wontons
3 tbsp olive oil
8 whole Shiitake mushrooms
fresh, chopped
2 whole Eryngii mushrooms
1/2 head Napa cabbage
2 whole leeks
remove green portion and roots, keep tender white parts, chopped
3 whole green onion
trimming off tougher green portions, sliced
1/2 bunch cilantro
1/4 cup ginger
freshly peeled and diced
1/2 block tofu
firm and chopped into small squares
3 packs wonton skins
about 50 skins per pack
sesame oil
to taste
soy sauce
to taste

This is a great vegetarian recipe for those who don't have a lot of time to cook on the weekdays. A sit down session of 3 hours will net approximately 120 wontons that can be frozen and prepared to eat in 5 minutes.
Preparing the Wontons
Combine the mushrooms, cabbage and leeks in a large pot with olive oil. Sauté until the volume reduces by 2/3 (approximately 8 minutes), stirring frequently. The idea is not to cook the vegetables but to reduce their mass by causing the water to drain out.
Turn off the heat and transfer to large bowl, excluding the water. Allow to cool.

Mix the onion, cilantro, ginger, and tofu into the vegetables and mushroom mixture.  
Fill small bowl with clean filtered water. By using the water as the "glue", one can seal the wonton into pouches.
Wrap the wontons as desired, filling each wonton with a small teaspoon of mixture.  I found that a good way to wrap them is to fill the middle of the wrapper, dab two adjacent edges with moistened finger, fold in half wet edge to dry edge making a triangle (making sure the edges are sealed), moisten one long tip of triangle, wrap other far tip on moist tip and press. Do not overfill the wonton skins. Another good way that is simpler is to simply fold the wontons into sealed triangles.
Lay the wontons on wax paper or tin foil onto a tray or pyrex dish. Make sure the wontons do not touch and place in the freezer.
When the wontons are frozen, gather them into a plastic freezer bag for storage.
Cooking the Wontons
Boil water in a saucepan.
When the water boils, drop in approximately 8 wontons per person. Allow for the water to come to boil again.
Boil for approximately 3 minutes or when done. The middle of wonton should not be cold.
Serve in bowl with sesame oil and soy sauce to taste.
Spoon in a small amount of the water from the boiling pot, just covering the bottom of the bowl. Enjoy!
