Super hit among campers...serve in tacos, in an arugula salad, or a bbq side dish.

Preheat bbq grill, to low heat.

Slice off skin and core a pineapple, slice into rings 1/2" thick, or into large wedges. Alternatively buy fresh pre-cut pineapple slices in the cold section of your grocery store.

Grill pineapple, low and slow, allowing to caramelize, 10-15 minutes per side. Don't allow the pineapple to burn - if it does you can cut off the burnt areas.

Allow pineapple to cool and chop in large chunks and serve. Stores well in fridge.

Toss pineapple in a large bowl with your favorite hot sauce, coating well. Let sit 30 minutes or more.
