Mom\'s Pea Soup Recipe
ingredients
all
1 bag split green peas (dried)
water
1 medium onion
medium dice
3 whole carrots
cut into 1/4- to 1/2-inch slices
3 whole parsnips
cut into 1/4- to 1/2-inch slices
polska kielbasa/weisswurst/bratwurst
cut in 1-inch chunks
salt and pepper
Here's my Mom's pea soup recipe. She made it for me when I went through the radioactive iodine treatment for my thyroid cancer and I had no appetite.

Put peas in a large pot and cover with water and then add about 3" more water.

Bring to a boil and then add onions, carrots, and parsnips.

Turn burner to med-low and stir often for about 30-45 min.

When peas are soft and starting to fall apart and make a thick broth, add the sausage.

Add salt and pepper to taste.

Italian sausage doesn't work very well with the recipe.
