Spicy Lentil and Bulgur Soup

ingredients

1 cup red lentils
or 250 grams
chicken stock
3-4 fingers wide
1 tbsp butter
2 tbsp flour
1 tbsp dried mint
1 tsp crushed red pepper
2 tbsp tomato paste
1/2 cup cold water
1/2 cup bulgur
or 100 grams
lemon wedges
crushed red pepper

This heartwarming soup is so delicious and simple to make that you will want to make it all the time. I learned how to make this soup at a cooking class in Turkey.

In a saucepan, cover the lentils with 3-4 fingers wide of chicken stock. Bring to a boil then simmer. Cook until the lentils fall apart.

While the lentils simmer, melt the butter in a soup pot. Add the flour to make a roux.

Add the mint, crushed red pepper, and tomato paste and stir constantly so that the mixture doesn't burn.

Add cold water (warm water will create lumps in the mixture) and cook and stir for 3-5 minutes.

Transfer the cooked lentils to the soup pot, then add the bulgur. Bring the soup to a boil, then add salt and pepper to taste.

Serve the soup with lemon wedges and extra red pepper on the side.
