Marinated Duck

ingredients
all
8 pieces scallions
finely chopped
3 tsp fresh ginger root
grated
3/4 cup dry sherry
2 tsp sugar
1 tsp salt
1 tsp pepper
2 lbs duck meat
cookware
  • grill
  • container for marination

Prepare a grill.

Combine all the marinade ingredients.

Pierce the skin of the duck.
 Pour the marinade over the duck meat and cover. Refrigerate 4 hours or overnight, turning occasionally.

Remove the duck from the marinade and reserve the marinade for basting.

Place the duck skin side down and grill over a medium heat for 40 minutes, turning occasionally and basting with the marinade.

notes
Breast meat should cook until rare to medium pink on the inside, so it may require less time on the grill. Be careful not to over cook.
