36 pitted Medjool dates
2 cups water
1 tsp vanilla
1/4 tsp cinnamon
When the recipe for Kabocha Squash & Tahini spread called for date syrup I thought it would be easy to find. It wasn't! I found it available to order online but I didn't want to wait so I found this recipe online instead, after typing in 'date syrup'!

Place the dates in a dry blender and chop coarsely

Combine all ingredients in a saucepan and bring to a boil

Reduce heat to medium-low and simmer, stirring frequently for 1 hour

Cool to room temperature, put in blender and blend until smooth

Store in refrigerator, heat slightly before using on anything you are serving hot.

Makes approximately 1.75 cups.

Use date syrup just as you would use maple syrup on pancakes, waffles, French toast, ice cream

It is higher in fiber and lower in calories than maple syrup or honey
