FD Crack Bars
ingredients
all
1 cup Medjool dates
1/2 cup Raisins
1 tbsp Coconut oil
melted
1/4 cup Cashews
raw
1/4 cup Almonds
raw
1/4 cup Sunflower seeds
raw
1/4 cup Pepitas
(raw pumpkin seeds)
1 tbsp Chia seeds
1 tsp Vanilla extract
however, if available, orange extract is even better
1/4 cup Chocolate chips
from Enjoy Life Foods (optional but HIGHLY recommended)
1/4 cup Coconut
shredded (optional)

When participants and staff are looking for a mid-day pick me up, these energy bars have been known to do the trick. They re-named them "crack bars."

In a food processor, process the dried fruit with coconut oil until it forms a ball. Set aside.

Process the nuts, seeds, extract and optional chocolate chips and/or coconut.

With the food processor running, add the dried fruit, one portion at a time to nut mixture.

Continue to process until the mixture sticks together. You can add small amounts of water or more coconut oil to achieve this.

Press into an 8 X 8 pan lined with parchment. Refrigerate 15-30 minutes.

Cut bars into any size that suits your needs. Wrap individually and refrigerate for up to two weeks or freeze for up to 3 months.

Try soaking and drying out nuts for easier digestibility.
