1 | In a large skillet, warm oil over medium heat and saute onion and garlic until tender. Set aside. |
2 | In large saucepan, brown bison. Stir in onion and garlic mixture, carrots, celery, tomatoes, tomato sauce, wine, stock, basil, oregano, salt and pepper to saucepan. Cover, reduce heat and simmer one hour, stirring occasionally. |
3 | Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. |
4 | Pour sauce over hot pasta. |
5 | Top with fresh Parmesan cheese. |

This was my first home-made italian sauce, and it was fantastic! My heritage is strongly Sicilian, so I was very excited that this turned out so well.
