Peachy White Gazpacho

ingredients
all
1 whole English cucumber
2 cloves garlic
or more up to a total of 3 cloves
1 large yellow tomato
2 sprigs Italian parsley
4 oz blanched almonds
(.75 cup), soaked overnight
2 whole limes
juiced
1 Tbs rice wine vinegar
1 Tbs brine from pickled jalapeño jar
1 1/2 cup water
1 1/2 cups green grapes
1 whole English cucumber
diced small
1 whole yellow tomatoes
diced small
3 whole peaches
diced small
1 whole jalapeno
minced
1 quarter red onion
minced
3 whole scallions
sliced
1/2 cup cilantro
chopped

A twist on the classic cold soup, this is so refreshing in the summer when peaches and tomatoes are at their best!

Place all the ingredients for the soup base in your blender and puree until smooth.

Pour mixture into a container and add garnish ingredients.

Allow to chill in the refrigerator for several hours or overnight.
