Roasted Red Pepper Gazpacho

ingredients
all
10 whole Red Peppers
cut into 1 inch pieces
2 cups Cherry Tomatoes
2 small Red Onions
cut into 1 inch pieces
5 cloves Garlic
1/4 cup Olive Oil
Salt & Pepper
to taste

Start your summer off with something healthy and delicious!

Preheat oven to 425 degrees and line a baking sheet with parchment paper.

Place red peppers, cherry tomatoes, red onions and garlic cloves on the pan. Drizzle with olive oil, add salt & pepper and mix to coat. Roast the vegetables for 20-30 minutes or until slightly charred & softened (rotate pan half way through baking). Remove from oven and allow to cool.

In a blender add the veggies and blend until smooth (I use a Vitamix blender which blends ingredients thoroughly). Feel free to add a little bit of water for your desired consistency. Allow to chill in refrigerator until cool then enjoy!
