ingredients

1/2 cup Coconut oil
melted
1/2 cup Maple syrup
1 tsp Vanilla extract
1 1/2 cups Whole wheat pastry flour
can substitute with gluten free flour
1 cup Rolled oats
1/4 tsp Salt
1/2 cup Shredded coconut
unsweetened
1/3 cup Chocolate chips raisins or currants

I love these cookies because they are vegan AND are delicious and can be gluten free.

Melt coconut oil.

Combine with maple syrup. Take mixture off heat.

Add vanilla extract.

In a separate bowl, combine flour, oats and salt.

Add liquid ingredients to dry ingredients.

Fold in coconut and chocolate chips, raisins or currants.

Using a small ice cream scoop, form little mounds of the dough on a cookie sheet.

Bake at 350 for about 12 minutes. Check after 10 to make sure they don't burn.
