1 | Place the whole sweet potatoes in a large pot, add water until potatoes are fully submerged. |
2 | Bring to a boil and simmer approximately 20-30 minutes until potatoes are very soft. A fork should very easily pierce the sweet potatoes. Bigger potatoes take more time. |
3 | Drain the sweet potatoes and set aside to cool. |
4 | Remove the skin of the sweet potatoes with your hands. It should slip off easily. |
5 | Return the peeled sweet potatoes to a pot, and mash until smooth. |
6 | Add coconut milk, stir well. Simmer on low for 10 minutes. |
7 | Add maple syrup, to taste - some prefer more or less sweet. |
8 | Add salt and pepper, to taste. |
