Sweet Potato Mashers

4 whole Sweet potatoes or yams
14 ounces Coconut milk
1 can
3 tbsp Maple syrup
Salt
to taste
Pepper
to taste

Everybody loves sweet potatoes ... this recipe is perfect for the winter harvest season or your next last minute vegan potluck.

Place the whole sweet potatoes in a large pot, add water until potatoes are fully submerged.

Bring to a boil and simmer approximately 20-30 minutes until potatoes are very soft. A fork should very easily pierce the sweet potatoes. Bigger potatoes take more time.

Drain the sweet potatoes and set aside to cool.

Remove the skin of the sweet potatoes with your hands. It should slip off easily.

Return the peeled sweet potatoes to a pot, and mash until smooth.

Add coconut milk, stir well. Simmer on low for 10 minutes.

Add maple syrup, to taste - some prefer more or less sweet.

Add salt and pepper, to taste.
