Muma Sheridan's Quiche

ingredients
all
1 Tbs Organic sour cream
3 whole Organic eggs
1 pinch Herbs de Provence
optional but great to have
Salt & Pepper
to taste
5 rashers Bacon
cooked and chopped
1 half Onion
chopped
coconut oil
or olive oil
1 half Zucchini
chopped
1 half Red Pepper
chopped
1 clove Garlic
1 whole Organic whole wheat pie crust
I cheat and buy mine, but you can make it from scratch if you want
1/2 cup Parmesan
1 dash Nutmeg
freshly grated
This was the first thing my Mum taught me to cook. It's delicious, easy and every time I make it (which is often) I think of her! Any of the vegetable/bacon ingredients can be switched out to your favorites, and of course, it can be easily become a vegetarian dish. Serve warm with a delicious salad!

Whisk sour cream and eggs in a bowl. Add salt, pepper and herbs for flavoring.

Cook bacon (grill or bake is best).

Lightly pan fry onion in some coconut oil (or olive oil).

Add chopped zucchini, red pepper and garlic. Cook until they just start to soften.

Remove from heat and add chopped bacon: season to taste.

Place the vegetables and bacon mixture evenly into the pie crust.

Add the sour cream and egg mixture.

Sprinkle parmesan on top with nutmeg and the Herbs de Provence.

Cook for 45-50 minutes (until top is browning) at 375F.
