Cilantro Lime Cream

1 cup raw cashews
2 Tbs lime juice
fresh
1/4 cup water
1 cup cilantro
fresh leaves loosely packed
1 clove garlic
sea salt
to taste

This cream will bring Taco Tuesday to a new level! It's made with a cashew base and is so rich and creamy, you will never miss the sour cream.

Soak cashews in enough water to cover them by an inch for an hour, then drain and rinse.

Blend all ingredients in a high powered blender (Vitamix); a food processor also works. You need to let it blend for a full minute or more so it gets very smooth and it will get a little warm from the friction.

Scrape into a dish and allow to chill in the fridge before serving. It will thicken when it's chilled.
notes
This is a kick'n taco topping, but would also be great on a black bean burger or in a wrap. If you want to give it a 'cheesy' taste add 1 tablespoon of nutritional yeast flakes.
