Momma Gallagher's Banana Bread

1 1/2 cup All-purpose flour
1 tsp Baking soda
1/2 tsp Salt
4 whole Bananas
very ripe
1/2 cup "Banilla" yogurt or plain vanilla yogurt
1 stick Butter
melted
1 cup Sugar
2 whole Large eggs
2 tsp Vanilla extract
1 cup Walnuts
toasted, chopped, optional

Preheat oven to 350 degrees.

Lightly butter bottom and sides of 9 by 5 inch loaf pan then lightly coat with flour.

In a medium bowl combine flour, baking soda, and salt.

In another bowl, mash bananas with "banilla" yogurt until blended.

In a large bowl with electric mixer on high speed, cream butter and sugar until light and fluffy. Add eggs and vanilla then beat until combined.

Fold banana mixture into butter until blended. Then lightly fold in dry ingredients and walnuts (optional). Mixture will be chunky. Put this batter into the pan.

Bake almost 1 hour - cool in pan for 5 minutes.

Run a knife around edges of pan to loosen bread.

Cool completely on a wire rack.
